Lamb Pilau Recipe

Ingredients:
• 2 cups basmati rice (washed and soaked for 30 minutes)
• 1 lb lamb (cubed)
• 1 large onion (sliced)
• 3 cloves garlic (minced)
• 1-inch ginger (grated)
• 2 tbsp ghee or oil
• 1 tsp cumin seeds
• 1 tsp coriander powder
• 1/2 tsp turmeric
• 1/2 tsp cinnamon
• 1/2 tsp cardamom powder
• 1 bay leaf
• 1 small tomato (chopped)
• 4 cups beef or lamb broth
• 1/2 cup yogurt
• 1/2 cup peas (optional)
• Salt & pepper to taste
• Fresh cilantro & fried onions for garnish
Instructions:
1. Sear the Lamb: Heat ghee in a pot, add cumin seeds, then brown the lamb pieces. Remove and set aside.
2. Cook the Aromatics: In the same pot, sauté onions until golden brown. Add garlic, ginger, and all the spices.
3. Simmer: Stir in the tomato and yogurt, then add the lamb back. Pour in broth, cover, and simmer for 45 minutes until tender.
4. Cook the Rice: Add the soaked rice and peas, stir gently, then cover and cook on low heat for 20 minutes.
5. Fluff & Serve: Let it rest for 5 minutes, then fluff with a fork. Garnish with fried onions and fresh cilantro.
Bonus Tip:
Serve with cucumber raita or a squeeze of fresh lemon for extra freshness!
